It is a great vintage cookbook that many will recognize from its candy cane striped cover design with art deco type. This is a “cook book plus””, with the beginner, as well as the experienced cook in mind. Therefore, they brought together recipes and menus which they worked out in the Good Housekeeping Kitchens and which add interest in both every day and party menus. Also given is attention to the simple methods of cooking on which all cookery is founded, from brewing a good cup of coffee to baking potatoes, poaching eggs or making a smooth, velvety sauce. Cooking is a science as well as an art, so in all good cooking, science and art must go hand in hand. Accuracy in measuring is therefore important, measuring quantities and measuring cooking time and cooking temperature. In all recipes and methods, then, they have used the standard half-pint measuring cup, the teaspoon and the tablespoon and all measures are level. They have also given cooking temperatures when necessary. Each recipe section begins with a discussion of that food type and suggested cooking methods. Also given are a discussion of how to increase recipes for an increased number in the party, the etiquette of service, jellies and jams, and, of course, and thorough index.
